Pumpkin Cupcakes with Cream Cheese Frosting

 Yields:  24 pcs

Prep Time : 10 mins

Baking temp: 350°F

Cooking time: 20 mins

Total time: 30 mins

INGREDIENTS:

Cupcakes:

1 package spice cake mix

1 (15 ounce) can pure pumpkin

⅓ cup water

⅓ cup vegetable oil

3 eggs

Frosting:

1 (8 ounce) package cream cheese, softened to room temperature

¼ cup butter

2 teaspoons vanilla extract

2 Tablespoons sour cream

6 cups powdered sugar

DIRECTIONS:

Cupcakes:

Preheat oven to 350 degrees F and line a muffin tins with paper liners.

Mix together cake mix, pumpkin, water, oil and eggs until well combined.

Pour batter into prepared cups, filling ⅔ full.

Bake for 18-23 minutes or until an inserted toothpick comes out clean.

Let cool completely.

 

Frosting:

In a large bowl, beat together cream cheese, butter, vanilla and sour cream until fluffy.

Beat in powdered sugar until smooth.
