Chocolate Chip Mocha Icebox Cake

Yield : 9″ pie

INGREDIENTS:

  • 8 oz cream cheese, softened
  • 1 cup mocha latte iced coffee
  • 3 cups powdered sugar
  • 16 oz whipped topping
  • 4 tablespoons unsweetened cocoa powder
  • 8-9 full graham cracker sheets
  • 30-35 small, crisp chocolate chip cookies
  • 1 cup mini chocolate chips

DIRECTIONS:

  1. Beat softened cream cheese.
  2. Add iced coffee and powdered sugar.
  3. Fold in whipped topping.
  4. Divide mixture into two bowls and stir unsweetened cocoa powder in one bowl.
  5. Cover the bottom of a 9 inch springform pan with graham crackers.
  6. Spread half of the mocha whipped topping over the graham crackers.
  7. Top with 15-17 chocolate chip cookies.
  8. Spread half of the chocolate whipped topping over the cookies.
  9. Top with graham crackers.
  10. Spread remaining mocha whipped topping over the graham crackers.
  11. Top with 15-17 chocolate chip cookies.
  12. Spread remaining chocolate whipped topping over the cookies.
  13. Cover with plastic wrap and store in fridge overnight.
  14. Slowly remove the sides of the springform pan.
  15. Sprinkle mini chocolate chips on the top.
