Pastry Crust


1 cup cake flour
1 cup all-purpose flour
1 teaspoon salt
1/2 cup butter
1/3 cup vegetable shortening
4 tablespoons of ice water

Grease and flour a 10 inch tart pan.
Combine the butter and shortening and freeze until firm. Cut in the flours and salt with a pastry cutter until it looks like this:

Freeze for about 15 minutes. Add the water and combine with the pastry cutter. Press into prepared pan, being careful not to overwork or get too warm. Freeze until filling is ready
